My Festival Season: Will Clarke, Biblos
Biblos co-owner Will Clarke is gearing up for a busy summer of food and music.
“We specialise in flatbread wraps and salad boxes. The secret to our success and what makes us stand apart from the rest is our unique fusion of Caribbean and Middle eastern wrap fillings and the fact that we make everything in-house. One of our biggest festival highs to date was being asked by Banksy to cater at his Dismaland Bemusment Park in Weston-Super Mare. We were one of two caterers supplying food to 4000 punters daily over the period of a month in a small 4metres by 4metres stall!
Street food and festivals are not new concepts, but in the last few years there has been a buzz around street food. Whether its jerk chicken smoked in an oil drum, Louisiana style crayfish and German sausages or some fresh Thai delights that you’re after, the next time you hit any number of independent festivals in the UK put aside some time to explore the culinary offerings. Our festival season started early this year with the BBC 6 Music Festival in February and Taste Chocolate Festival in March.
I take our stall to various festivals around the country, and although I feel we have our system perfected I still find inspiration from other food traders and that excites me.
