Bristol’s new bakery on wheels
We’re not short of great bakeries in Bristol and now there is one more to add to the list: Hilda Bakery.
The difference with Hilda is that it is on four wheels, with Will Prosser baking goods in a converted garage at home in Westbury Park before heading out in his mobile patisserie and cafe.
Hilda is parked up outside St John’s Court on Whiteladies Road in Clifton from Tuesday to Friday and at BAWA in Filton on Saturday mornings.

Will, 43, was previously a pastry chef at Little Shop & Pantry in Henleaze and among the baked goods for sale are Eccles cakes following the same recipe at Little Shop alongside croissants, pain au chocolats and more.
The bakery has recently had a rebrand, changing its name from Common Lemon to Hilda which was the middle name of Will’s grandmother, who had left Will some money when she died which he used to found the business.
“It was quite important for me to have a name which meant something emotionally,” said Will, who before becoming a chef used to work in marketing.
“I have always just had a bit of a pipe dream to have my own neighbourhood bakery and it’s just been an obsession that I’ve been fortunate enough to follow.
“The idea with this was to do a bakery in a really miniature form.”
