Celebrated south Bristol restaurant closing its doors

One of Bristol’s most exciting restaurants is closing after operating for just over a year.

The Pony Bistro on North Street opened its doors to a fanfare of a buzz in May 2021 by acclaimed restaurateurs Josh and Holly Eggleton.

The Eggletons owned the Pony & Trap in Chew Magna for almost 15 years, holding a Michelin star for a decade.

Transporting the essence of the restaurant to Bedminster, the siblings brought the company to Southville as a pop-up when covid-restrictions were lifted.

Now the owners have announced their bistro, which is situated inside Bristol Beer Factory, will close come the end of the year.

The pair said its closure is to allow them to focus on the upcoming relaunch of The Pony and Trap – renamed the Pony Chew Valley.

Josh, who runs a string of venues including Salt & Malt, Root and the Kensington Arms with Holly, said: “The Pony Chew Valley needs our full focus now, and so naturally we’ll all return to the Pony Chew Valley to ensure everything is totally on point! And we’re really excited to get back to the flagship, our home.”

Holly added: “On the running and opening of Pony Bistro, Holly Eggleton says: ‘The modern British restaurant was an opportunity which presented itself out of the blue, we were really excited by the project and we simply had to do it.

“The timing couldn’t have been better – we knew we were going to embark on the refurbishment of the Pony Chew Valley at this point, so it ensured we could keep our entire Pony team in a job in the interim.

“It’s been nothing short of amazing having this venture to focus on while the Pony Chew has been under refurb.”

The Pony Bistro is in the Michelin Guide

In the meantime, the final months at the bistro will see the venue serve roasts every Sunday, the launch of their summer menu and the continuation of a small plates menu.

The Pony Bistro will close on December 24.
