Four Bristol food businesses to join forces for unique collaborations
Bristol is a haven for food collaborations. Barely a weekend passes without one chef popping-up in another’s kitchen or a team of several working together to create a unique tasting menu.
But not all collaborations are created equal.
For Bristol24/7’s EatDrink celebrations on Wednesday, June 26, we have forged a link between award-winning taco slingers Gourmet Warriors and expert noodle makers Tomo No Ramen to bring the first ever birria ramen to Bristol for one night only.

Birria is a Mexican beef or goat stew that is often served in cheese-laden tacos with a consomé for dipping. The results is an chewy yet crisp, sauce-laden umami experience that will haunt you for days and leave you a dribbling mess, desperate for more.
In Bristol, Gourmet Warriors are the undisputed birria kings. They can be found at The Plough in Easton in the evening or touring the food markets by day, bringing their wares to hungry lunch-time office escapers who don’t mind returning to their desk with sauce down their shirts.

But never before has Bristol had the chance to try birria ramen, until now. It has been done – in America and in Berlin – but not round these parts. Old Market favourite Tomo No Ramen have worked with Gourmet Warriors to create a ramen dish that forges a Tomo dashi with a birria broth, served with noodles, a cheese crisp, plenty of birria beef and fresh coriander, pickles and red onion to top it all off.
You can even get a birria taco on the side for dipping purposes. The result is mind-blowing. They’ve got a vegan version too. In fact, we’d argue you probably shouldn’t come and eat it at Left Handed Giant next week because you will be bereft at the fact it is not widely available.

The test birria ramen was a resounding success
But that’s not all. Wednesday’s event is a celebration of all things food and drink, so we would be remiss not to have at least two food traders for you to choose from.
Not content with creating Bristol’s first birria ramen, we have also linked up Pizzarova with Pash Peters from Bristol Lido to bring Neapolitan street food favourite pizza fritta to the celebrations.
When you think of fried pizza, what springs to mind is likely a Scottish-style creation, a triangular, battered, grease-laden slice that will be joyous for the first three mouthfuls and then tinged with regret.
You’d be wrong. The calzone-esque pizza fritta is deep fried, but the dough is so incredibly thin that it turns almost crisp and the fillings inside remain so fresh that you find yourself contemplating a second one after you’ve demolished the first. That’s quite alright too, as between them Pizzarova and Pash Peters have come up with four different flavours for you to try – and one of them is vegan.
The only chance to try these one-off creations will be at the EatDrink celebration at Left Handed Giant next week on Wednesday, June 26 from 5.30pm. Tickets are £10 (or £4 for Bristol24/7 members) and include a beer, a copy of the guide and canapés.
The event is powered by Streets Steele who will be giving out tote bags for you to take your guide home in, and we’re delighted to be joined by DJ Patry bringing summer dance tunes all night long. If we can’t hold your attention with the incredible food on offer (unlikely but you never know), we’ll also have games and the Euros showing.
