Husband and wife team to open first restaurant together
An experienced chef who has been in charge of some of Bristol’s best restaurants is joining forces with his wife to open their own small plates restaurant.
Mark and Karen Chapman met in Sydney while they were both working in hospitality.
Since moving to Bristol, Mark has been executive chef at Bravas on Cotham Hill, and Gambas and Cargo Cantina in Wapping Wharf, and in the last few years has spent all his time at Gambas.

COR is set to open in October on 81 North Street in Bedminster which was most recently Flip cafe and deli, and before that Eastern Tandoori.

”At the heart of COR is a passion for providing great hospitality and a love of sharing great food,” say Karen and Mark on the restaurant’s website.
”COR has many meanings for us. It originates however from the Latin word ‘heart’. And at the heart of COR is our desire to bring together our love of hospitality in a friendly and welcoming place that is inclusive to all.”
Food and drink will be influenced by the couple’s love of the Mediterranean as well as playing to Mark’s fine dining training “yet also incorporates the more fun, sharing style food we love and that Mark has been working with over the last six years”.
The small menu will be seasonally updated and created with the aim of reducing waste and surplus produce.
