Restaurant with Michelin-starred pedigree coming to Clifton
It may be Bristol’s most upmarket enclave, but Clifton punches below its weight when it comes to the city’s best restaurants – with the notable current exception of Wallfish.
But things could be changing with the opening on The Mall next month of Wellbourne, owned by a chef who “is a force of nature and one of the best cooks I have had the pleasure of working with” according to Jan Ostle of highly acclaimed Chandos Road restaurant Wilsons.
The chef that Ostle is talking about is Ross Gibbens who was formerly head chef at Michelin-starred London restaurant Dabbous.
is needed now More than ever
Gibbens has also worked at the two Michelin-stared Le Manoir aux Quat’Saisons in Oxfordshire, London’s Launceston Place and The Square (a former two-star restaurant), and The Vineyard in Berkshire.
He will be joined behind the stoves at Wellbourne – on a site most recently occupied by Krishna’s Kitchen and previously Prosecco – by his former Dabbous colleague Michael Kennedy, with front of house duties carried out by another former Dabbous stalwart, Martin Irwin.
“We intend to provide an all day offering with brunch on the weekends,” Gibbens told the Bristol Post.
“The food will be based on tried and tested combinations, but with a modern touch and lack of clutter on the plate.
“The food will be innovative and seasonal. Each dish will focus on its core ingredient and there will be no unnecessary components or elements that detract from presenting that ingredient in the most respectful and complementary manner possible.”
