Root to open second restaurant

The team at Root say that they feel “a great weight of responsibility” as they prepare to open their second restaurant.

The award-winning restaurant will remain in its original home in Wapping Wharf as well as opening a second site in Wells, where Root head chef Rob Howell was born and raised.

The new restaurant on Sadler Street aims to celebrate the best of Somerset’s produce sourced from the surrounding farms, market gardens and dairies.

In a statement, the Root team said: “We are delighted to share that we are opening a second Root restaurant in Wells, Somerset, in addition to our original Root site in Bristol.

“The site has been home to some great restaurants before us and we feel incredibly fortunate to be in such a fantastic location in the heart of the city, with views of the cathedral.

“We feel a great weight of responsibility to get this right and offer something special in Wells.”

Like at Cargo in Wapping Wharf, the new Root in Wells will offer a frequently changing menu of small sharing dishes with a strong emphasis on seasonal ingredients.

The menu will be predominantly vegetarian but a few sustainably-sourced meat and fish options will also appear on the menu.

Rob and his wife and Root restaurant manager Meg will be based in Wells, where they will continue to receive support and guidance from Root co-owners Josh Eggleton and Luke Hasell.

The Root’s team statement added: “Root Bristol has and continues to be a popular and busy restaurant, with our loyal and hardworking team being vital to its success.

“We are proud of what we have achieved and after five years, it felt like an opportune moment to create a second restaurant, with Rob’s career ambition being to contribute to the community in the way of food and hospitality.

“We are grateful for this opportunity and are excited to get started.”
