How To Be A Chef Recipe Of The Week – Chelsea Buns
Our latest How To Be A Chef course is currently running every week at The Square Food Foundation kitchen in Knowle West as part of our Better Bristol initiative.
The course gives 16-25 year-olds the opportunity to learn how to cook with experienced chefs, gain a qualification and provides them with support to find work in the catering industry.
Throughout the 12 week course we’re bringing you the best recipes from the kitchen, and this week it’s mouth watering Chelsea Buns.

The recipe was chosen by young chef Charlotte, who is a carer for her brother. Charlotte has already been offered paid work with Fosters Event Catering after completing work experience with them as part of the course.
CHELSEA BUNS
25g butter
220g plain flour
1/2 tsp sugar
1/2 tsp salt
10g yeast
110ml warm milk
FILLING:
25g butter, melted
25g caster sugar
40g raisins
1 tsp mixed spice
GLAZE
3 tbsp caster sugar
3 tbsp hot water
Rub butter into dry ingredients. Blend together yeast and milk, pour into butter mix and work into a dough. Knead 10 mins. Roll into a rectangle 30 x 23 cm. Brush with butter. Mix caster sugar and raisins and sprinkle over. Roll up lengthwise and cut into 8 pieces. Lay the slices flat in a greased 20 cm cake tin. Cover and leave to prove 15-20 mins. Bake in a pre-heated oven 20-25 mins 220 degrees. Dissolve sugar in water and brush over buns as they come out of the oven.
